The guar beans have endosperm that contains galactomannan gum, a substance that forms a gel in water, which is commonly known as guar gum and is used in dairy products, such as ice cream and as a stabilizer in cheese and cold-meat processing. The industrial grade guar gum is used in paper, textile processing, explosives, detergents, drilling fluids, ceramics, paints and other industries. The purified grade guar gum is used in the pharmaceuticals, dialectic, cosmetic and food sectors.
