Buca di Beppo is eliminating trans fatty acids from all of the oils it uses to cook, including its fryer oil, on May 1, 2007. All of the company's 92 restaurants will be converted to Wesson Smart Choice Cottonseed Canola Oil, a non-hydrogenated trans fat free cooking oil made from a blend of cottonseed and canola oil.
