Admittedly, sauerkraut juice is only for the initiated. Nonetheless, it's impossible to imagine the Biotta range without it. Since the spring of 2015, Biotta has been producing all its sauerkraut juice solely with BioSuisse-certified Swiss cabbages - and it's quality that you can taste. Naturally, this is possible thanks only to dedicate organic farmers who grow and harvest top quality cabbages, the vital ingredient in this delectable and mild juice. Karl Schenk from Madiswil is one of numerous organic farmers whose organically grown cabbages end up in Biotta bottles.
Cultivating this vegetable is challenging; it takes time and patience. Because unimposing as cabbages may be, they make high demands on the soil when it comes to nutrients. For this reason, cabbages cannot be planted in the same field for five whole years after the last harvest. The key to looking after the fields and ensuring soil remains fertile for years to come is crop rotation. This plays a major role in organic farming. Soil is given time to recover, thus enabling land to remain fertile. Man works hand in hand with nature - and not at its expense.
Alongside his cabbages, Karl Schenk has recently begun growing flowers. These so-called 'flower strips' combat pests such as cabbage butterflies in a completely natural manner. Karl Schenk has been farming his land organically for the past four years, and is now convinced of the efficacy of this pilot project. Not only do cabbages now flourish in his fields, but so also do numerous wild flowers - bringing agriculture into harmony with nature.
